Skinny, Summer Drink ALERT: “If You Like Pina Coladas”

Ahhhh summer. A time for trips to the beach, wearing less makeup, questionable decisions, and fruity drinks. There is nothing I love more than the perfect marriage of pineapple and coconut in a pina colada, but the sad truth is that they are jam-packed with sugary calories and can give you an adult tummy-ache after two or three. Plus, they’re made with rum and we all know I’m a vodka girl.

So you can imagine my sheer euphoria when I spotted this in the liquor store on Friday:

svedka-colada1-2151082Like, I may or may not have cried a little. Svedka is one of my preferred vodkas as it is, so this was just too much to handle. I knew what had to be done. I went straight to the market and bought a pineapple. Here are the three tips and tricks for making pineapple-infused coconut vodka, known as “If You Like Pina Coladas.”

1. Cut the pineapple into large chunks or buy already-cut pineapple. Put the chunks in a container, size depending on how much vodka you want to make. I used a medium-sized, cylinder-shaped plastic container with a lid (ghetto). Glass jars are classier, obviously. Pour the vodka over it (cover all the pineapple) and let it sit out overnight (no need to refrigerate). If the container has a lid, you can place the lid on top, but don’t seal completely. You can let it sit out for a couple days, but overnight at least.

2. The next day (or whenever you’re ready to start boozing), you can eat the pineapple by itself as a nice, alcoholic treat. A few pieces paired nicely with the Chick-fil-a biscuit I had for breakfast on Saturday at the lake. But by midday, I was “eating the pineapple like they were potato chips” (per my friend, Allyson), which is probably why I had to take a “nap” on the pontoon boat in the middle of the afternoon. But anyway. The vodka itself is the star of the show, so make a drink with it–since it will be flavorful, you really only need to mix it with soda (0 calories!), but you can add a splash of juice if you like. We discovered Dole’s Pina Colada juice this weekend, but remember–just a splash if you’re trying to cut cals and sugar.

3. Lastly, be careful with this summertime elixir! Because it has been so amazingly infused, the alcohol is hard to taste, so you may find yourself guzzling drinking more than usual (just trust me on this one), which could lead to passing out early, sexting your ex, or eating three pounds of taco dip (wearing a bikini).
